Slow Cooker Beef Kare Raisu

Growing up, we always used the pre-made curry roux blocks to make Japanese curry. I still use the blocks on occasion when I'm in a pinch, but it's nice to actually know how to make this curry from scratch, especially when I'm cooking for my peeps who have food allergies or dietary restrictions.

This curry is hearty and you can control how mild or spicy by omitting or adding lots of cayenne pepper. The beef is tender when cooked in the slow cooker, so I often make a beef version in my handy slow cooker. While this version uses potatoes, carrots, peas, and corn, you can use your own combination of vegetables and protein of choice. When my son saw the first copy of my book, he exclaimed, "Yay! you can make that curry again!" lol.
