baGoong alamaNg

belaCan

A fermented shrimp paste that is dried, pungent, and dark brown in color. It is used in many Southeast Asian cuisines. Belacan has a powerful flavor and smell, and you'll find it in curry recipes. Remember, only a small quantity is necessary because it is salty and very pungent, but it adds a savory flavor and brings depth to dishes. You can find belacan in Asian grocery stores or online. If you have trouble finding belacan or dried shrimp paste, you can use shrimp paste as a substitute.


chineSe bLack viNegar

Primarily made with rice and sometimes with wheat and barley, this vinegar is commonly found in Chinese cooking. It is strong and fragrant, and although it is tart, it is also slightly sweet. The closest substitute to Chinese black vinegar is balsamic vinegar. If you cannot find Chinese black vinegar, you can use balsamic, but keep in mind that balsamic vinegar is a little sweeter, so you may have to cut down on any sugar if the recipe calls for sugar.
